Had some fun planting a "little garden" today. We planted the pumpkins from the fair, carrots, zucchini, peppers, cucumber and flowers! We will see how it turns out.
My sweet girl took the 2nd one. I think she has an eye!

Coffee Time!

Good Afternoon,
Yes, I said, Good Afternoon.... I know we are supposed to do this in the morning but time just has the best of me. We were up and out of the house for P.E. by 8:00 am. It has been crazy weather around here. Just when you think winter is over this cold front comes in and freezes us all out. The beginning of the week we were in shorts and today we are in sweats! We have had a busy week (as usual) but we accomplished a lot. A full week of school completed, yes! We are winding down our school and can actually see the light at the end of the tunnel. I can almost feel summer! Of course, I really can't feel summer because we are freezing. I am sure we have a difference of opinion on what is freezing and what is not. I am officially a desert rat so anything below 60 is COLD!!!
Anyway, here are some pics of the week..

Bran Flax Muffins


Today we made Bran Flax Muffins. My kids really love them and they are good for you, too. I don't even think they know how nutritious they are for you. If you are interested here is the recipe:

1 1/2 c. Unbleached White Flour
3/4 c. Flaxseed meal
3/4 c. Oat Bran
1 c. Brown Sugar
2 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp. Salt
2 tsp. Cinnamon
1 1/2 c. Carrots, shredded
2 Apples, peeled and shredded
1/2 c. Raisins (optional)
1 c. Nuts, chopped
3/4 c Milk
2 eggs, beaten
1 tsp. Vanilla

Mix together dry ingredients plus apples and carrots. Combine milk, eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over mix. Fill muffin cups 3/4 full. Bake at 350 degrees for 15-20 mins. Enjoy!

We buy Bob's Red Mill Flaxseed meal and the recipe is on the package.

365-*100 Steps

So, I was really excited about this post. This is what I came up with... We went skiing for the last weekend of the season and to celebrate my boys birthday. We took three of my boys friends and we had a blast. Do you know how much four hungry teenagers can eat? If only I had their metabolism. Lots of sun and snow.
Got out of the cabin and trudged through thigh high snow, got on the lift and got these shots......






I love the last one. To me it looks like whipped cream.

My Boy turns 15!

Honestly, I don't know where the time has gone. I remember when my boy was a baby and my step mom would say to me "time goes fast, enjoy every moment". The long nights, the baby throwing up (he was colic), I did not think those times would end. Now they are a distant memory. My boy is my answered prayer... I know most every child is an answered prayer, but he really is. You see, I had fertility problems and we prayed for this child for 5 years. At times, I thought, I was not going to be a mommy.

Every now and then I remember that when he calls me and I hear my name. Mommy... or now it is mom...every now and then when he is tired it slips and Mommy comes out. I never correct him because I know all too well how fast time goes. He will soon no longer call me that. I have been the most blessed mom ever to get a chance to parent my boy. I marvel that God chose me to be his mommy.

Thank you Jesus for not forgetting me!

For this child I prayed, and the LORD has granted me my petition which I asked of Him.
